Oatmeal raisin cookies always have the hardest PR battle. It just combines two things that people just don't like by themselves and I think it does the cookie a great disservice. But a nicely baked O.R. cookie has one of the best balances of texture and flavor. It's got to be a bit crispy and craggy around the edges but still soft and chewy. It's even better with bittersweet chocolate chips so that you have the fruity sweetness of raisins, the sugariness of the cookie, and the bitterness of the chocolate. It's also got the warmth of spices and is perfect especially for autumn days. Pumpkin pie spices in a cookie?! Com'on.
