Recipe:
1. Wash strawberries. Cut off stems AFTER washing.
2. If you like a sweeter jam, use a 1:1 ratio of fruit to sugar by weight. If you want something a bit fruitier or tart, use only 1/4 the amount of sugar by weight and add pectin powder (follow package instructions). Add fruit and sugar to a saucepan, a small pinch of salt, and the juice of half a lemon.
3. Reduce down to a simmer until desired consistency. Trick for telling how the jam will freeze: Take a spoon and put it in the freezer and put a drop of your jam onto the frozen spoon and it will cool down rapidly to its set consistency.
4. Jar in an appropriate size vessel.
